Spice Rub for Chicken
This chicken rub is built on a large base of paprika, with garlic powder, thyme and celery seed behind it and cayenne for heat. Paprika makes up most of the volume, so the mix gives the skin a deep red color as it cooks. The recipe makes enough for a family-sized batch of chicken. Because the seasoning is salty and strongly colored, it works on a whole bird, thighs or wings alike.
Instructions
Measure all the spices into a bowl and stir them together until the color is even and no pockets of salt or cayenne remain.
Pat the chicken dry, then rub the mix over the whole bird or all the pieces. Work some into the cavity as well as the outside of the skin.
Leave the seasoned chicken to stand for a few minutes so the salt and spices settle onto the surface. Then cook it the way you normally would.
