Spice Rub
This is a big-batch spice rub built on paprika, with smoky chipotle, sweet brown sugar and a sharp note of dried lemon peel. Salt is kept to a quarter cup, so the spices do most of the work, unlike many store-bought mixes that lean on salt as cheap filler. Mix it once, keep it in a jar, and you have a ready rub for whenever you cook.
Instructions
Measure all of the ingredients into a large bowl, or straight into the container you plan to store the rub in.
Stir or shake the mixture until the brown sugar and lemon peel are spread evenly through the paprika and no clumps of sugar remain.
Transfer the rub to an airtight container and close the lid tightly.
Store it in a cool, dark place. Because the ingredients are dry, the rub keeps for a long time, so you can make a large batch and use it as needed.
