Spicy Cheddar Dip with Olives

This spicy cheddar dip is a hot, creamy bowl of sharp cheese, green chiles and black olives, served with homemade pita chips. The cheese and mayonnaise are melted together in the microwave and stirred between rounds until smooth and orange. Garlic powder and hot sauce give it a kick you can adjust to taste. Use real mayonnaise, since the original author warns that Miracle Whip changes the flavor completely.

Instructions

Cut each pita into triangles, the way you would slice a pizza. Pull each triangle apart into two halves and lay them on a cookie sheet with the inside surface facing up.

Toast the pita in the oven until golden brown. Take it out before it turns dark, because it will taste bitter. These are the chips for scooping the dip.

Stir together the cheese, mayonnaise, green chiles, half of the olives, garlic powder and hot sauce in a microwave-safe bowl.

Microwave on high until the edges liquefy and bubble, then stir until the mixture is uniform. Repeat the heating and stirring until the whole bowl is creamy and a rich orange color.

Garnish the top with the remaining olives, the green onions and the diced tomato, arranged in a bulls-eye pattern.

Serve the dip warm with the pita chips alongside.
