Spicy Fried Rice
Spicy Fried Rice is a quick one-pan way to turn leftover cooked basmati into a full meal for three. Fresh red chile and chile powder give it real heat, while ginger, garlic and scallion build the base. Fish sauce and light soy sauce add savory depth, and coconut oil gives the rice a faintly sweet, rounded flavor. Cold, day-old rice works best, since it separates in the pan.
Instructions
Heat the coconut oil in a non-stick pan. Add the onion, garlic, ginger, scallions and fresh red chile.
Stir the aromatics as they cook until the mixture smells fragrant. The source says about 30 minutes, which is far longer than the 15 minute total time it gives, so watch the pan and stop when the vegetables are softened and aromatic rather than burnt.
Add the cooked basmati rice to the pan, then the chile powder, light soy sauce, fish sauce, chicken powder, salt and pepper.
Keep stirring until the seasonings are evenly mixed through the rice and it is heated all the way through. Serve hot.
