Spicy Garlic Oil

Spicy garlic oil is a simple infusion that turns a neutral frying oil into something with real character. Forty cloves of garlic and eight Thai bird chiles steep slowly over low heat, so the oil takes on sweet garlic and sharp heat without scorching. Use it to fry chicken, fish, or fries, where the flavor carries into the crust. Choose an oil with a high smoke point, such as peanut or canola.

Instructions

Put the oil, garlic cloves, halved chiles and salt into a large stockpot.

Set the pot over low heat and let it warm gently for 1 hour, so the garlic and chiles slowly give their flavor to the oil.

Strain out the garlic and chiles, then let the oil cool completely.

Store the oil in the refrigerator. Throw it out once it smells off, looks smoky, or tastes rancid.
