Instructions
Put the tofu, oat flakes and raw spelt flour in a large bowl and add a little water. Mix until the ingredients come together into a thick, spreadable paste, adding more water a little at a time if it feels too stiff.
If you want a smoother, more stable spread, stir in some soy lecithin powder. It acts as an emulsifier and helps bind the oil and water together.
Fold in the chopped spring onions and the chopped pickled gherkin until they are spread evenly through the mixture.
Stir in a spoonful of margarine, rapeseed oil, or both, until the spread looks glossy and soft.
Season with salt and pepper, tasting as you go, and adjust until the flavor suits you. Serve the spread straight away on bread or crackers.
