Strawberry Fromage Frais
Strawberry fromage frais is a light, set mousse that gets its body from gelatin and whipped egg whites rather than cream. Sugar-free jam and low-fat fromage frais keep it gentle on sugar and fat, while the folded egg whites make the texture airy instead of dense. It takes fifteen minutes of work and then sets on its own in the refrigerator, so it suits making ahead for a dinner.
Instructions
Soak the gelatin sheets in cold water until they are soft and pliable.
Beat the fromage frais and strawberry jam together until the jam is evenly blended and no streaks remain.
Whip the egg whites with the sugar until they hold stiff peaks. Gently fold them into the fromage frais mixture so the air stays in.
Lift the softened gelatin out of the water and stir it into the boiling water until it dissolves completely. Pour it into the strawberry mixture and stir carefully until it is fully incorporated.
Spoon the mixture into individual cups or one large bowl. Chill in the refrigerator for several hours, until the dessert is firm.
Top with fresh berries just before serving.
Make it personal.
