Succotash
Succotash is a simple American pot of lima beans and sweet corn, and this version scales up to feed a crowd. The pickled pork is optional, but parboiling it first gives the beans and corn a salty, savory base without extra seasoning. The large quantity of fresh corn is what makes it, so cook it in season. Sugar and butter are there if you want them, and a chopped red bell pepper adds color.
Instructions
If you are using the pickled pork, put it in a large pot, cover it with water, and parboil it.
Add the shelled lima beans to the pot and cook them until they are thoroughly boiled, for at least 10 minutes, since raw lima beans contain a toxin that boiling destroys. Canned beans need no such cooking.
Stir in the corn cut from the cob. Once the corn goes in, stay close to the pot and stir often, because it scorches easily.
Add the sugar and the butter or olive oil if you are using them, then season with pepper to taste. A chopped red bell pepper can go in at this stage if you want it.
Serve the succotash hot, with the pork alongside if you included it.
