Sudanese Ful Medames
Ful medames is a Sudanese dish of slow-simmered fava beans dressed with olive oil, lemon and garlic. Soaking the dried beans overnight and then simmering them gently gives a tender, creamy base that takes on the dressing well. Cumin and coriander keep the seasoning simple. You can mash a few beans for body or leave them whole, and eggs, tomato or feta turn a bowl into a full breakfast.
Instructions
Rinse the dried fava beans under cold water and put them in a large pot with 4 cups of water. Leave them to soak overnight, or for at least 8 hours, until they have softened.
Drain the beans, rinse them again, and return them to the pot with 4 cups of fresh water. Bring to a boil over medium-high heat, then turn the heat down to low.
Simmer the beans for about 1 to 1½ hours, stirring now and then and skimming off any foam that rises. They are ready when they are tender all the way through.
Drain the beans in a colander and tip them into a mixing bowl. Add the garlic, olive oil, lemon juice, cumin, coriander and salt, and stir until the beans are evenly coated.
If you like a creamier texture, press some of the beans lightly with a fork or potato masher. Leave them whole if you prefer.
Spoon the beans into a serving dish and serve warm or at room temperature. Add any of the toppings you like, such as parsley, tomatoes, onions, hard-boiled eggs or crumbled feta, and serve with bread.
