Sukuma wiki is a Swahili dish of braised kale or collard greens, eaten across Kenya and Tanzania. Here the greens cook in a quick base of onion, tomato, smoked paprika, coriander and curry powder, with optional minced beef or chicken stirred in for richness. Cayenne adds heat and lemon juice brightens the finish. The whole pot is ready in under half an hour, and it is the usual partner for ugali.

Instructions

Warm the oil in a medium pot over moderate heat. Add the onion and garlic and stir fry for 2 to 3 minutes, keeping them moving so they soften without burning.

Stir in the tomato, coriander, curry powder and paprika. Cook for about 2 minutes, until the spices smell fragrant and the tomato begins to break down.

Add the minced meat and the bouillon, and stir until the meat is evenly coated. Cook for at least 5 minutes, until the meat is cooked through.

Add the greens, cayenne and lemon juice. Cook, stirring often, for 5 to 10 minutes, until the greens are tender.

Taste, then season with salt and pepper as needed. Serve hot, traditionally alongside ugali.
