Super Foamy Milkshake
The Super Foamy Milkshake is a thick, airy shake built from skimmed milk and three powders instead of ice cream. Locust bean gum does the thickening, inulin gives a smooth, full mouthfeel, and sweet whey helps the milk whip into foam. The result is low in fat, fairly high in fiber, and so dense that one tall glass fills you up. Add vanilla, banana or strawberry to taste.
Instructions
Stir the locust bean gum powder, inulin powder and sweet whey powder together in a small bowl until they look like one even powder.
Tip the powder into the skimmed milk in a tall container, so there is room for the foam to grow.
Whip with an electric mixer for 2 minutes, moving the whisks up and down so they pull air into the milk. It is ready when the shake has turned into a fine, thick foam.
Add the syrup or flavoring you like and fold it in gently. If you use cocoa powder, stir it in with a spoon rather than the mixer, because its fat can make the foam collapse.
