Sweet Charoset is a fruit and nut paste made for the Passover seder table. This version leans on mashed banana and chopped dates for body, with grated apple, walnuts and red wine in the traditional manner. Citrus zest keeps the sweetness from going flat, and a small amount of matzo meal binds everything into a spreadable texture. Serve it alongside matzo, where it stands in for the mortar the holiday story describes.

Instructions

Peel, core and grate the apples, then chop and mash the bananas. Put both in a large bowl with the lemon juice and zest, the orange juice and zest, the finely chopped dates and the ground walnuts, and stir until evenly combined.

Add the cinnamon, red wine and matzo meal. Blend thoroughly until the matzo meal has soaked up the liquid and the mixture holds together as a thick paste.

Stir in honey a little at a time, tasting as you go, and stop when it is as sweet as you like.
