Sweet Masa Bites with Hazelnut Chocolate Dipping Sauce
These fried bites turn a stack of corn tortillas into a crisp, golden dessert with a tender, sweet middle. The torn tortillas are pulsed with milk, egg yolks, sugar and butter into a paste, so they behave like a dough and fry up like small doughnut holes. The dipping sauce folds whipped cream into hazelnut and chocolate syrups, giving a cool, airy contrast to the hot bites.
Instructions
Stir the hazelnut syrup, chocolate syrup and vanilla together in a bowl. Gently fold in the whipped cream until the sauce is smooth, then refrigerate it until you are ready to serve.
Put the milk, egg yolks, salt and sugar in a food processor with the torn tortillas. Pulse until the mixture becomes a chunky paste.
Scrape the paste into a mixing bowl and stir in the butter. Work quickly so the butter does not melt into the mixture.
Pour the oil into a 6-quart Dutch oven and heat it to 375°F. Roll the tortilla mixture into balls about 1 to 1½ inches across.
Fry the balls 6 to 8 at a time until they are crisp and golden brown, which takes about 2 to 3 minutes.
Lift the bites out and drain them on a cooling rack set over a sheet pan. Let them cool for 1 to 2 minutes, then serve warm with the chilled dipping sauce.
