Sweet Rice
Saffron-yellow rice sweetened with raisins and crowned with almonds makes a dessert that needs only one pot and six ingredients. The rice cooks in a measured amount of water, matched to its own depth, until steam escapes through little vents in the surface. A tightly covered rest then finishes it gently. Toast the almonds first if you want extra crunch, and swap in currants or a sweetener as you like.
Instructions
Wash the rice and put it in a pot.
Pour in water until it stands at the same depth as the rice, so the water level matches the top of the grains.
Stir in the salt, saffron, sugar and raisins.
Cook over high heat until the water has disappeared and steam is rising through small holes in the surface of the rice.
Turn the heat down to warm and scatter the almonds over the top.
Cover the pot tightly and leave it to stand for 20 minutes before serving.
