Tahini Goddess Dressing

This tahini goddess dressing is a thick, creamy, garlicky sauce that you can pour over salad, spoon onto rice or use as a marinade. A small pinch of xanthan gum holds the oil and water together without eggs or dairy, giving a smooth texture similar to bottled versions. Six cloves of garlic, soy sauce and lemon give it a sharp, savory punch, while toasted sesame seeds and fresh herbs finish it.

Instructions

Put the canola oil, water, tahini, cider vinegar, lemon juice, soy sauce, garlic and xanthan gum into a blender.

Blend on high for about 2 minutes. The mixture is ready when its texture changes and it turns very smooth and creamy.

Add the toasted sesame seeds, parsley and chives. Blend on low just until they are mixed in.

Measure the xanthan gum carefully. Too much turns the dressing into a rubbery glob, and too little lets the oil and water separate.

Taste before serving. The flavors are strong and need to be in balance, and if you swap brands of any ingredient you may need to adjust the amounts. Use the dressing on salad or rice, or as a marinade.
