Tamil Spice Mix (Milagai Podi)

Milagai podi is a Tamil table condiment of crushed spices, and this version is about as short as the recipe gets. Red chile powder and turmeric give it heat and color, while crushed raw garlic adds a sharp edge that the melted ghee softens and carries. Stir it into a loose paste and scoop it up with hot idlis or dosais. The spice mix can also be used dry.

Instructions

Crush the garlic cloves until they form a rough paste, and melt the ghee so it is fully liquid.

Put the red chile powder, salt and ground turmeric in a small bowl. Add the crushed garlic and the melted ghee.

Stir everything together until the powder is evenly moistened and no dry pockets of chile remain.

Leave the mixture to sit for 3 minutes so the garlic and spice can flavor the ghee. Serve it alongside hot idlis or dosais for dipping.
