Tamina (Algerian Semolina Honey Dessert)

Tamina is an Algerian semolina dessert that comes together in about 30 minutes with only a few ingredients. Toasting the semolina first gives it a nutty, golden base, and the butter and honey bind it into a soft, rich mass scented with orange blossom water. It is traditionally served at engagement parties, weddings, baby showers and Mawlid, so it suits a table meant for sharing.
Instructions
Toast the semolina in a frying pan or cast iron dish until it turns an even golden color. Take it off the heat and let it cool completely before using it.
Melt the butter and honey together in a saucepan, then stir in the orange blossom water.
Add the cooled semolina to the pan a little at a time, mixing as you go so no dry patches form.
Cook for 3 to 5 minutes, stirring constantly, until the mixture is well combined and uniform.
Tip the tamina onto a plate while it is still warm and smooth the surface level with a spoon or spatula. Do not leave it in the pan for long.
Dust the top with ground cinnamon and decorate with almonds or dragées.
Let it cool, then serve.
