Tarbes salad is a sweet and sour mix of crisp lettuce, orange, walnuts and blue cheese. The orange and the balsamic dressing bring the sweetness and acid, while diced Roquefort adds a sharp, salty counterpoint. Deeply browned onions give crunch and a savory edge. You can cook the onions ahead and let them sit with the lettuce so they flavor the leaves, which makes this an easy salad to prepare for guests.

Instructions

Cut the onion into half moons and brown it in the tablespoon of olive oil until it is deep golden and crisp. Move it to a bowl and squirt a little lemon juice over it.

While the onion cooks, wash the lettuce well, soaking it several times so no grit is left. Tear it into bite-size pieces, rinse them under running water in a salad spinner, then spin until completely dry, since wet leaves will water down the dressing.

Put the dry lettuce in a bowl and add the onions, the broken walnuts, the orange pieces and the diced cheese.

For the dressing, put the extra-virgin olive oil, balsamic vinegar, mustard, salt and pepper in a jar. Close the lid and shake hard until the dressing looks blended.

Pour the dressing over the salad, toss everything together in a large bowl and serve right away.
