Thobwa la mtedza is a Malawian drink made from toasted sesame seeds and peanuts blended with water. Toasting is the step that matters, because it turns raw seeds into something deeply nutty and fragrant. The result is a creamy, lightly sweetened drink that needs only four ingredients and a blender. Serve it cold on a hot day, and stir it before pouring, as the sesame settles out.

Instructions

Put the sesame seeds and peanuts in a dry frying pan over medium heat. Stir constantly so nothing scorches, and take the pan off the heat once they turn golden brown and smell nutty.

Let the toasted seeds and peanuts cool for a few minutes. Tip them into a blender with the water.

Blend until the mixture is smooth and creamy. Pour it through a nut milk bag or fine mesh strainer set over a large bowl.

Squeeze or press the bag to get out as much liquid as you can. Discard the solids that remain.

Stir the honey or sugar into the liquid until it dissolves, adding more or less to suit your taste.

Chill the drink in the refrigerator for at least an hour. Stir it well before serving, since it separates as it sits.
