Tigernut Fufu
Tigernut fufu is a Nigerian swallow made from tiger nut flour, which gives it a mild natural sweetness that cassava or yam versions lack. Semolina and xanthan gum act as binders, turning the loose flour into a thick, moldable dough with no pounding required. It takes only a pot, a whisk and a few ingredients, and it pairs well with any rich soup or stew.
Instructions
Bring a pot of water to a boil over high heat.
In a separate bowl, mix the tiger nut flour, xanthan gum and semolina until evenly combined. Mixing the dry ingredients first keeps the xanthan gum from clumping when it meets the water.
Whisk the dry mixture into the boiling water a little at a time, so no lumps form.
Keep cooking and stirring until the mixture thickens into a smooth, cohesive mass that holds its shape and is cooked through.
Serve hot, in portions that can be pinched off and swallowed with a soup or stew.
