Tilapia Fish Pepper Soup

Tilapia pepper soup is a Nigerian dish built on a short list of ingredients: whole fish, onion, ground chile, ginger and a spoonful of palm oil. Cooking the tilapia whole keeps the flesh moist and gives the broth body from the bones. The ground chile and ginger make it hot and sharp, while the palm oil adds color and a rounded, earthy richness. It is served as a side dish.

Instructions

Clean the tilapia by removing the guts and any other parts you do not want to eat, then rinse the fish well under cold water.

Put the fish in a pot and pour in enough water to cover it. Bring it to a simmer and cook for a few minutes.

Add the sliced onion, ground chile pepper, palm oil and ground ginger. Season with salt to taste, and top up with more water if the fish is no longer covered.

Cover the pot and keep cooking until the fish is done and the flesh is opaque and flakes easily. Taste the broth once more and adjust the salt before serving.
