Timatim fitfit is a cold tomato and onion salad served as a side with Ethiopian main courses. Its sharpness comes from lemon juice and a spoonful of Dijon, which cling to the diced tomatoes as they sit in the refrigerator. A little honey or sugar softens the acidity, and a seeded jalapeño adds heat only if you want it. It takes minutes to assemble and needs very little else.

Instructions

Put the diced tomatoes and chopped onion in a mixing bowl. Add the chopped jalapeño if you want some heat.

In a small bowl, whisk the olive oil, lemon juice, Dijon mustard, honey or sugar if using, and a pinch of salt until the dressing looks smooth and evenly mixed.

Pour the dressing over the tomato mixture and toss gently so everything is coated without crushing the tomatoes.

Taste the salad and add more salt if it needs it. You can also add a little more lemon juice or honey or sugar to suit your taste.

Cover the bowl and refrigerate for at least 30 minutes, so the flavors have time to come together.

Scatter the chopped cilantro or parsley over the top just before serving. Serve the salad chilled, alongside Ethiopian main dishes.
