Tirana Fërgesë with Peppers (Fergesë e Tiranës me Piperka)

Tirana fërgesë is a baked Albanian dish of peppers and tomatoes bound with melted butter and salty cheese. Peeling the vegetables first gives a soft, silky texture, and a spoonful of flour thickens the cheese into a creamy coating rather than a loose sauce. Feta or salted cottage cheese supplies the seasoning, while chili is added to your own taste. Serve it hot from the oven as an appetizer, ideally with bread for scooping.

Instructions

Peel the tomatoes and the peppers. Warm the olive oil in a saucepan, add the vegetables, and sauté them for 5 to 7 minutes. Take the pan off the heat and let the vegetables cool for 15 minutes.

Chop the cooled tomatoes and peppers to whatever size you prefer.

Melt the butter in a second saucepan. Stir in the flour and the cheese, then season with salt, black pepper and chili pepper to taste. Mix until the cheese and flour are well combined with the butter.

Stir this cheese mixture into the chopped vegetables until evenly blended.

Preheat the oven to 350°F (175°C). Bake the mixture for 15 minutes, then serve immediately while it is hot.
