Toasted Baguette Slices with Pecan Butter, Brie and Apples
Toasted baguette rounds topped with cream cheese, apple, brie and homemade pecan butter make a hot, bite-sized starter that suits a party table. The pecan butter is the clever part: nuts ground with a spoonful of peanut oil and a pinch of salt turn into a spreadable paste with no extra equipment beyond a blender. The final minute in the oven only softens the brie, so the toast stays crisp underneath.
Instructions
Lay the baguette slices on a cookie sheet and brush them with the melted butter. Bake them in a 400°F (250°C) oven for about 8 minutes, until golden brown, then take them out and let them cool.
Put the chopped pecans and peanut oil in a food processor or blender and run it until you have a smooth paste. Season the pecan butter with salt to taste.
Spread cream cheese over each cooled toast. Top each one with an apple slice and then a slice of brie.
Spread some of the pecan butter over the top of each toast and press a pecan half onto it.
Return the toasts to the cookie sheet and bake them for about 1 minute, just until the cheese softens slightly. Serve them right away.
