Tomato basil sausage pasta is a fast weeknight dinner that goes from pan to plate in about 15 minutes. Loose sausage meat browns hard and seasons the whole sauce with its own fat and spice, so there is little else to prepare. A cup of milk stirred into the marinara softens the acidity and turns the sauce a creamy pink, while fresh basil goes in at the end.

Instructions

Bring a pot of water to the boil and cook the spaghetti until it is al dente, tender but still slightly firm when you bite a strand.

While the pasta cooks, put the sausage meat in a pan over medium heat. Cook it for 6 minutes, breaking it up as it goes, until it is well browned.

Add the chopped onion, salt and pepper to the pan. Cook for 2 more minutes, stirring now and then, until the onion starts to soften.

Pour in the marinara sauce and the milk, then add the chopped basil. Let the sauce cook for 2 minutes, until it is hot and the milk has blended into the tomato.

Drain the spaghetti in a colander, then stir it into the sauce until every strand is coated.

Divide the pasta between 4 plates and serve straight away.
