Tostón (Fried Plantains)

Tostón is a Venezuelan fried plantain that turns a starchy green fruit into something crisp and salty. The method is what makes it work: the slices are fried twice, with a flattening in between. The first fry softens the plantain so a mallet can press it thin, and the second, in hotter oil, crisps it through. Serve with a salsa or dipping sauce, or alongside a main course.

Instructions

Heat the oil in a deep fat fryer to 180°C / 350°F.

Slice the plantains very thinly. Fry the slices in the hot oil until they are golden brown.

Lift the slices out of the oil and let them cool until you can handle them. Sprinkle them with salt, then flatten each slice with a mallet until it is very thin.

Bring the oil back up to a very high heat. Fry the flattened slices until they are crisp and golden on both sides.

Drain the finished tostones on absorbent paper before serving.
