Tostones (Fried Plantains)
Tostones are fried plantain slices, a simple Caribbean snack that needs only two ingredients and one pan. This version uses a ripe plantain, so the slices brown quickly and take on a gentle sweetness from the fruit's own sugars. Olive oil and low heat keep the cooking calm and easy to watch. Each side needs about a minute, which makes this a fast side for two.
Instructions
Pour the olive oil into a frying pan and warm it over low heat.
Peel the plantain. Cut it into rounds, or slice it lengthwise if you prefer longer pieces.
Lay the plantain pieces in the hot oil. Fry them for about 1 minute on each side, until both sides are golden brown.
Lift the pieces out of the pan and let them drain. Leave them to cool a little before you eat them.
