Turkey and Bacon Salad

This turkey and bacon salad is a hearty bowl built for people who want real meat in their greens. Salty chopped bacon and mild deli turkey sit on a bed of shredded lettuce, with sweet carrots and briny olives to cut through the richness. Rolling and slicing the turkey into small spirals makes it easy to get some in every forkful. It comes together in about 30 minutes, and any dressing you like will work.

Instructions

Cook the bacon until it is fully done and crisp. Lay the strips on a paper towel and press down to soak up the excess grease, then chop them into small pieces.

Wash the lettuce, carrots and olives. Shred the lettuce by hand or with a knife, and lay it in a clean bowl. Use at least 2 cups of lettuce for the base.

Roll the slices of deli turkey into a slender log. Slice across the roll slowly so the turkey falls into small round spirals.

Pile the carrots, olives, chopped bacon and turkey spirals on top of the lettuce. Finish with your favorite dressing and serve right away.
