Tuwo Masara (Nigerian Corn Fufu)

Tuwo masara is a smooth, mild corn swallow from the Hausa and Fulani people of northern Nigeria, and it needs only two ingredients. The skill is in the stirring: corn flour added gradually to boiling water turns thick and stretchy without lumps. Shaped into balls, it is made for tearing off pieces and dipping into a soup or stew, which is how it is traditionally eaten.
Instructions
Bring a pot of water to a boil.
Add the corn flour a little at a time, stirring as you go. Keep stirring until the mixture turns thick and stretchy.
Stir in a small splash of water to loosen the mixture until it reaches the texture you want. Cover the pot and let it cook for a few minutes.
Shape the tuwo masara into balls while it is still warm and serve.
