Ukpo Oka (Nigerian Corn Pudding)

Ukpo oka is a steamed corn pudding from the Ika-Ibo people of Delta State, Nigeria. The corn is blended raw with fresh pepper, onion and ground crayfish, so the pudding sets into a savory, lightly smoky block rather than a sweet one. Palm oil gives it color and a rich, earthy flavor. There is no frying and no stirring over a flame, just blending and a slow steam.
Instructions
Put the corn, fresh pepper, onion and ground crayfish in a blender with a small amount of water. Blend until you have a thick mixture, adding water only as needed to keep the blades turning.
Tip the blended mixture into a bowl. Stir in salt and palm oil, tasting as you go until the seasoning suits you.
Pour the mixture into a mold. Set the mold in boiling water and steam it for 45 minutes.
