Vegan Pate
This vegan pate is a quick, meat-free spread made from walnuts, sweet peas and onion, ready in about eight minutes. The walnuts give it body and a mild nuttiness, while the peas keep it soft and slightly sweet. A pinch of cumin adds warmth without taking over. Everything cooks in one pot and goes through a blender, so it suits a last-minute snack table. Spread it on crackers or scoop it up with carrots.
Instructions
Put the chopped onion and the walnuts in a pot and sauté them together for about 5 minutes.
In a separate bowl, combine the sweet peas, salt, black pepper and cumin. Mix well so the seasoning is spread evenly through the peas.
Add the seasoned peas to the onion and walnuts in the pot. Keep sautéing for about 3 more minutes.
Turn off the heat and let the mixture cool. Purée it with a hand-held blender or in a food processor until it is creamy but still slightly nutty, close to the texture of a pate or dip.
Serve with crackers, bread, baby carrots or other raw snacking vegetables.
