Vegetable Party Sandwiches
Vegetable Party Sandwiches are a make-ahead finger food built on a spread of finely grated carrot, celery, cucumber and onion held together with mayonnaise and a little gelatin. The gelatin gives the filling body, so it spreads cleanly on trimmed white bread. One batch makes 28 sandwiches, cut into quarters for 112 small bites, and damp paper towels between the layers keep them from drying out until serving.
Instructions
Dissolve the gelatin in the cold water, following the directions on the gelatin package.
In a large bowl, combine the dissolved gelatin with the carrots, celery, cucumbers, onion, lemon juice and mayonnaise. Stir until the vegetables are evenly coated.
Refrigerate the mixture for 25 hours so it can set.
Check the consistency before using. If the mixture has jelled too much to spread easily, stir in ⅓ to ½ cup more mayonnaise.
Use a knife to trim the crusts from the edges of the bread.
Spread the vegetable mixture on the bread and assemble 28 sandwiches.
Cut each sandwich into quarters.
Layer the cut sandwiches in a large covered plastic container, placing damp paper towels between the layers. Keep them covered until serving time.
