Watergate Salad is a pale green American potluck dessert made from just five pantry ingredients and no baking. Instant pistachio pudding mix is stirred straight into undrained crushed pineapple, so the fruit juice sets the pudding without any milk. Marshmallows and mandarin oranges add chew and tang, and an overnight rest in the refrigerator softens everything into a cool, fluffy, spoonable mixture that is easy to make ahead.

Instructions

Pour the crushed pineapple and all of its juice into a large mixing bowl. Add the dry pistachio pudding mix and stir until no dry powder remains and the mixture starts to thicken.

Stir in the mini-marshmallows and the drained mandarin oranges until they are spread evenly through the pudding.

Fold in the whipped cream or Cool Whip gently, using a spatula and lifting from the bottom of the bowl, until the mixture is evenly pale green with no white streaks.

Cover the bowl and refrigerate it overnight so the marshmallows soften and the flavors blend before serving.
