Watermelon Mojito Smoothie
This watermelon smoothie borrows the lime and mint of a mojito and leaves out the rum. Using frozen watermelon cubes instead of ice gives a cold, thick drink without watering down the fruit flavor. The lime keeps the sweetness in check, and the honey is optional, since ripe watermelon is often sweet enough alone. It takes one blender and five ingredients, and it adjusts easily to how thick you like it.
Instructions
Squeeze the lime and set the juice aside. Pick the mint leaves from the sprigs if you prefer a smoother drink, or add the sprigs whole if your blender is strong.
Put the frozen watermelon cubes, lime juice, mint, and the honey if you want it into the blender. Pour in 3 oz of water to start.
Blend until the mixture is smooth and no chunks of watermelon remain. If it is too thick to pour or the blades are struggling, add more water, up to 4 oz in total, and blend again.
Pour into a glass and top with a fresh mint sprig if you like.
