Wisconsin Ackawi Cheese Triangles

Wisconsin ackawi cheese triangles are small puff pastry parcels filled with shredded ackawi, a brined white cheese from the Levant that is made in Wisconsin. The filling is kept sharp with plenty of parsley, raw onion and a pinch of ground red pepper, and a beaten egg white binds it without making it heavy. Each sheet of pastry yields 16 triangles, and the whole batch is ready in about 20 minutes.

Instructions

Stir the shredded cheese, parsley, onion, egg white and red pepper together in a bowl until evenly mixed. Set the filling aside.

Dust a work surface lightly with flour and roll one sheet of puff pastry into a 12 x 12-inch (30 x 30 cm) square. Cut it into 16 squares, each 3 x 3 inches (7.5 x 7.5 cm).

Spoon 1 tablespoon (15 ml) of the filling onto the center of each square. Fold the pastry over the filling to make a triangle, then press the edges closed with the tines of a fork.

Set the triangles on an ungreased baking sheet and bake at 400°F (200°C) for 10 minutes, or until they are golden brown.

Roll, fill, shape and bake the second sheet of puff pastry the same way. Serve the triangles warm.
