Wonjo bissap is a deep red hibiscus drink from Gambia, served cold and sharply tart. It needs only dried petals, water and sugar, so the flavor comes entirely from the flower, which gives a clean cranberry-like tang. Steeping off the heat keeps the color vivid, and sweetening while the liquid is warm dissolves the sugar fully. A squeeze of lemon at the end is optional, and a big batch keeps well in the refrigerator.

Instructions

Bring the water to a boil in a large pot.

Add the dried hibiscus petals to the boiling water, then take the pot off the heat. Let the petals steep for 20 to 30 minutes, until the water has turned a deep red and tastes distinctly tart.

Strain the liquid through a fine mesh strainer or a piece of cheesecloth into a pitcher or jug, discarding the petals.

Stir the sugar into the liquid while it is still warm, until no grains remain. Taste and add more sugar if you want it sweeter.

Let the drink cool to room temperature, then refrigerate it for a few hours until thoroughly chilled.

If you want a sharper edge, stir in the freshly squeezed lemon juice once the drink is cold. Serve in glasses over ice cubes.
