Yemenite charoset is a dark, spiced date paste made for the Passover seder table. Where many versions rely on apples and sweet wine, this one gets its character from dates, pomegranate and a surprisingly large amount of cinnamon. Black pepper and dried marjoram or oregano give it a savory edge, and wine vinegar keeps the sweetness in check. Pounding the pomegranate kernels by hand releases their juice into the paste.

Instructions

Put the date spread in a large bowl. Crush the walnuts and add them to the dates.

Peel the pomegranate and pound the kernels in a mortar and pestle until they break down. Add them to the date spread.

Stir in the ground cinnamon and the ground black pepper until they are evenly mixed through the dates.

Pour in the wine vinegar and add the partially crushed dried marjoram or oregano. Mix well until the herbs and vinegar are evenly distributed.
