Yerushalmi Kugel (Sweet Noodle Casserole)
Yerushalmi kugel is a Jerusalem noodle casserole that pairs caramelized sugar with a generous dose of black pepper. The caramel is made by browning sugar in olive oil, then stirred through egg noodles so the whole dish turns a deep gold. Plain white sugar helps, because you can see the first brown streaks appear. Legend ties the dish to followers of the Vilna Gaon in the 18th century.
Instructions
Cook the noodles according to the package instructions, then drain them and set them aside in a large bowl.
Heat the olive oil in a frying pan and add ⅓ cup (80 g) of the sugar. Stir without stopping until the sugar starts to turn brown, then take the pan off the heat.
Leave the caramel for a few minutes. It keeps darkening off the heat and becomes thick.
Scrape the caramel over the noodles. Add the remaining sugar, the eggs, cinnamon, pepper and raisins, and stir until everything is evenly mixed.
Transfer the mixture to a baking pan and bake at 350°F (180°C) for about 40 minutes, until the top begins to brown.
