Yeung Chow Fried Rice

Yeung Chow fried rice is a classic Chinese fried rice that packs three proteins into one pan. Here the bacon, prawn and sweet barbecued char siu share the skillet with golden garlic, peas, scallion and egg, so each forkful tastes a little different. Using cooked jasmine rice keeps the grains separate, and the optional jalapeno adds a sharp kick. It makes seven servings in about 20 minutes.
Instructions
Heat the corn oil in a non-stick skillet. Add the garlic and fry it until it turns golden brown.
Add the diced bacon, prawn and char siu. Cook them together for about 5 minutes, until the prawn has changed color and the meats have begun to cook.
Add the scallion, peas and beaten egg. Keep cooking and stirring until the egg is set and everything is cooked through.
Stir in the cooked jasmine rice, then season with the salt and pepper. Add the diced jalapeno if you want some heat, and mix until the rice is evenly coated and heated through.
