Yogi Tea
Yogi tea is a spiced tea in the style of chai, simmered from whole spices rather than steeped from a bag. The long, gentle simmer pulls heat from the ginger and peppercorns and sweetness from the cinnamon and cardamom, while the cloves get a short boil of their own first. The black tea goes in only at the end, so it stays mild. A pot makes two quarts, enough for several cups.
Instructions
Bring 2 quarts (about 2 L) of water to a boil in a 3 to 4-quart pot.
Add the cloves and boil them for 1 minute.
Add the peppercorns, cinnamon sticks, cardamom pods and ginger slices.
Cover the pot and simmer gently for at least 30 minutes. For the fullest flavor, keep the lid on tight and simmer over low heat for 2 to 3 hours.
Take the pot off the heat and stir in the black tea.
Leave the tea to cool, then strain out all the spices and ginger.
When you are ready to drink it, sweeten to taste with honey or maple syrup. Add soy milk or dairy milk.
