Yogurt Dip

This yogurt dip is a cool, tangy mix of three ingredients that needs no cooking at all. Seeding the cucumber keeps the dip from turning watery, and chopping it very fine spreads its fresh crunch through the yogurt. Dried mint is stronger per spoonful than fresh, so the amounts differ, and either works. Give it time in the refrigerator, because the flavors need a while to settle together.

Instructions

Cut the cucumber in half lengthwise and scoop out the seeds with a spoon. Chop the flesh as finely as you can, so every spoonful of dip carries a little crunch without any large pieces.

Crumble the dried mint between your fingers, or chop the fresh mint if you are using that instead.

Stir the yogurt, cucumber and mint together in a bowl until evenly mixed.

Cover the bowl and chill it thoroughly. The dip is ready when it is cold and the mint has had time to flavor the yogurt.
