Yubeshi (Japanese Walnut Mochi Confection)
Yubeshi is a Japanese sweet that pairs chewy glutinous rice dough with chopped walnuts and a sugar and soy sauce base. The soy sauce gives the dough a deep brown color and a savory edge that keeps the sugar from tasting flat. Shiratama-ko makes the texture soft and springy, while the walnuts add crunch. The microwave stages make the dough easy to cook with little equipment.
Instructions
Combine the sugar, soy sauce and water in a pan and simmer, stirring so the sugar does not scorch. Continue until the sugar has melted and the mixture boils.
Add the rice flour and mix well until it comes together as a dough.
Microwave the dough for 30 to 40 seconds, then take it out and mix well. Repeat this cycle until the dough turns brown.
Stir the chopped walnuts into the dough until they are evenly distributed.
Return the dough to the heat once or twice more. It is finished when it has browned solidly all the way through.
Press the dough into a flat container and leave it to cool.
