Zalabiyeh II is a batch of flat fritters made from matzah meal, eggs and water, with no flour needed. The meal is soaked in plenty of water, then bound with eggs, and the batter thickens as it rests, so patience does the work that gluten usually would. Wet hands and a moistened plate keep the soft dough from sticking while you shape it. It is a useful recipe for anyone cooking around Passover rules.

Instructions

Put the matzah meal and salt in a large bowl and stir them together.

Pour in 4 cups of water and mix thoroughly so the meal is evenly soaked.

Add another 2½ to 3 cups of water and mix again until it is fully incorporated.

Add the eggs and keep mixing until you have a smooth, consistent batter.

If the batter looks too thin, leave it to rest for 7 to 10 minutes, until it thickens.

Wet your hands with water. Using a moistened plate as a work surface, shape the mixture into round, flat patties.

Fry the patties in a skillet with oil until they are cooked through.
