Zhug

Zhug is a fiery green and red condiment made by grinding dried cayenne peppers, a whole head of garlic and a big bunch of fresh coriander with toasty spices. The caraway and cardamom give it a savory, slightly perfumed edge that sets it apart from plain chili sauce. It takes about 15 minutes, keeps in a sealed jar, and a small spoonful will season whatever you serve it with.
Instructions
Remove the stems from the dried cayenne peppers and peel all the cloves from the head of garlic. Have the cumin, black pepper, caraway seed and cardamom pods measured out and ready.
Put the spices, peppers, garlic and coriander into a grinder or food processor, and add salt.
Grind and blend everything together until the mixture is evenly combined into a single paste. Taste it and add more salt if it needs it.
Spoon the zhug into a jar, close the lid tightly and keep it sealed between uses.
