Zucchini Salad
Zucchini Salad swaps oil and vinegar for a dressing made entirely of citrus juice. Instructions
Wash the zucchini, lettuce and cherry tomatoes. Slice the zucchini and the cherry tomatoes, and leave the lettuce in leaves or tear it if the pieces are large.
Squeeze the two lemons, the two blood oranges and the orange into a small bowl or jug. Stir the juices together so they form a single dressing.
Put the zucchini, lettuce and tomatoes in a large bowl. Pour the citrus dressing over the top and toss well, so every slice is coated, then serve.
