Zuppa Toscana

Zuppa toscana is a creamy sausage, bacon and potato soup made popular by the Olive Garden restaurant chain, and it is easy to make at home. Spicy Italian sausage and smoked bacon give the broth its depth, while russet potatoes soften and thicken it slightly. Kale or chard goes in at the end so it stays green. This recipe makes twelve servings, so it suits a crowd.
Instructions
Set a skillet over medium-high heat and cook the sausage, breaking it into small pieces with a spoon as it browns. Drain off the fat and set the sausage aside.
Brown the chopped bacon in the same skillet over medium-high heat. Drain it and set it aside with the sausage.
Put the water, chicken broth, potatoes, garlic and onion into a large pot. Bring to a simmer over high heat and cook until the potatoes are tender when pierced with a fork.
Stir the sausage and bacon into the pot and let everything simmer together for 10 minutes.
Add the kale or chard and the cream. Season with salt and pepper and heat the soup through before serving.
