1-2 Chocolate Cake
This is a one-pan chocolate cake that you mix and bake in the same 8-inch square dish, so there is no bowl to wash. The oil and unsweetened chocolate melt together in the oven first, and the batter is simply beaten with a fork. Whole wheat flour gives it a sturdier crumb, and the chocolate pieces and nuts on top add texture. Cream cheese or sour cream can go in for a richer cake.
Instructions
Put the oil and the unsweetened chocolate in an 8-inch (20 cm) square pan. Set the pan in a 350 °F (180 °C) oven just until the chocolate has melted. If you want to use the cream cheese or sour cream, add it now.
Add the sugar, egg, whole wheat flour, salt, baking soda, vanilla and water to the pan. Keep the chocolate pieces and nuts aside for later.
Beat everything with a fork for about 2 minutes, until the batter is smooth and creamy. Scrape down the sides of the pan and spread the batter evenly.
Sprinkle the chocolate pieces and nuts over the top. You can leave them on the surface or cut them partway into the batter.
Bake at 350 °F (180 °C) for 30 to 40 minutes, until a toothpick pushed into the center comes out clean. Cool the cake in the pan, and serve it warm or cooled.
