Tirana fërgesë with veal is a baked Albanian dish of sautéed meat and onion folded into a salty, buttery cheese sauce. The cheese does the seasoning work, so you can choose a sharp feta or a salted cottage cheese and adjust the chili to your own taste. Only two pans and a short bake are needed. The source also allows beef liver in place of the veal, which suits anyone who likes a stronger flavor.

Instructions

Heat the olive oil in a saucepan. Add the cubed veal and the diced onion and sauté them together for 15 minutes.

Melt the butter in a second saucepan and stir in the flour. Add the cottage cheese or feta, then season with salt, black pepper and chili pepper to taste.

Combine everything in one saucepan by stirring the sautéed veal and onion into the cheese mixture. Mix until the meat is evenly coated.

Bake in an oven preheated to 350 °F for 15 minutes. Serve immediately while it is hot.

If you prefer, use the same weight of beef liver in place of the veal and follow the same steps.
