Afia Efere (Efik White Soup)
Afia efere is the white soup of the Efik people of Nigeria, and it gets its body from mashed yam rather than from palm oil or tomato. The broth is built on goat, assorted meats and smoked fish, then scented with calabash nutmeg, uziza and uyayak. Yam balls melt into the pot and thicken it. It is simple, affordable, and a close relative of the Igbo ofe nsala.
Instructions
Boil the assorted meat and the goat meat in a pot until both are soft. Boil the smoked fish separately until it is soft as well.
Grind the calabash nutmeg, uda, uziza seeds and half of the uyayak to a nearly smooth powder. Stir in some water and pass the mixture through a sieve to get a loose spice liquid.
Peel and wash the yam, then boil it until a knife slides in easily. Mash it until completely smooth, either by pounding or in a food processor.
Add the crayfish, the peppers and the remaining uyayak to the cooked meat, pour in some water and bring the pot to a boil. Taste the broth and season with salt and stock cubes.
Stir in the sieved spice liquid and let the soup simmer on low heat so the flavors join.
Drop in the mashed yam in medium-sized balls and raise the heat. Keep the soup moving until the yam balls have dissolved and the broth turns thick.
Taste again and adjust the salt and seasoning. Stir in the uziza leaves and serve.
