Zalabiyeh (Sweet Fritters)
Zalabiyeh is a yeasted fritter made from little more than flour, water, salt and sugar, which means you can make it from the pantry. The dough is deliberately sticky, and oiled hands are the trick for shaping it into small portions as they go into the pan. Fried until golden on both sides, the fritters are traditionally finished with confectionary sugar or a dip in honey, and the eggs and milk are yours to add or leave out.
Instructions
Combine the flour, sugar, salt, yeast and lukewarm water, along with the eggs and milk if you are using them. Work everything together until you have a sticky dough that is fairly loose rather than stiff. Keep the oil aside for frying.
Cover the bowl with a towel and leave the dough in a warm place for 45 minutes so the yeast can work.
Wash your hands, then knead the dough again briefly. Cover it and let it rest for another 20 minutes.
Pour a shallow layer of vegetable oil into a frying pan and heat it over medium heat on the stove.
Wash your hands again and coat them with a little oil so the dough does not stick. Pull off small portions of dough and drop them into the hot oil.
Lower the heat and fry each piece until the underside is golden brown. Turn it over and fry the other side the same way.
Lift the fritters out of the oil and set them on paper towels to drain off the excess oil.
